Santander Coffee

Santander, in Colombia's northeast, farms coffee under heavy native shade on lower, warmer slopes than the Andean axis — conditions that produce the country's most distinctive regional cup: mellow, sweet, chocolate-toned, closer in feel to a fine Brazil than to bright Huila.

The department pioneered Colombian organic certification in the 1970s and remains a stronghold of certified shade-grown production, with bird-friendly forest canopies that double as some of the country's most biodiverse farmland.
